Who Doesn’t Love Cinco De Mayo!? This Week’s Menu is Fresh & Festive with a Mexican Flair.
Happy Weekend! We are still in full quarantine swing over here. But, we’re definitely making lemonade out of lemons, literally and figuratively. So, we’re soaking up our home time, getting that homeschooling in, and whipping up fun food creations! We know it could be so much worse, and we’re not trying to take for granted how blessed we are through this pandemic! I hope you are finding yourselves safe and healthy as well!
As you know, Cinco de Mayo is this week! While we won’t be having an epic pool party or BBQ like we usually do, we can still celebrate in our own way! So this week’s menu is fresh and festive with a Mexican flair. I hope you enjoy it!
Monday: BBQ Chicken Mini Tacos – Mini food makes me happy! I don’t know why. It’s just so much fun to eat! I actually bought the mini corn street tacos. Put them between cups of an upside down muffin tin and baked at 400F for about 15 min. Let rest so they harden. So fun! **NOTE – I did NOT use HORMEL taco meats. I used my own shredded chicken. HERE is my recipe for the perfect shredded chicken.Once cooked, I shred it and toss to coat the shredded chicken in my favorite BBQ sauce.
Tuesday: Nacho Bar – This is a festive way to get the family in the kitchen together! Arrange your favorite toppings and build your own nachos! You could even have a contest to see whose was the most creative! I included ingredients for the following toppings: taco meat, pico de gallo, guacamole, shredded cheddar, black olives, pickled jalapenos and refried beans. Feel free to swap those out for your own favorites!
Wednesday: Fish Tacos – I love fish tacos. We have a bunch of local spots that serve up amazing fish tacos. But our favorite is Taco Boy downtown. We especially love them in the summer with a good margarita. Since we can’t go out for them, we’ll make them at home! **NOTE – I prefer Halibut over Cod, so that’s what I included in my grocery list. But feel free to change that ingredient. Also, I used greek yogurt instead of sour cream which is listed in the grocery list as well.
Thursday: Skinny Taco Salad – I love a taco salad to keep things light. It has tons of flavor, but you don’t feel heavy after eating it! Best of both worlds :o)
Friday: Beef Enchiladas – Beef, cheese, tortillas…. need I say more? These are ooey, gooey and delicious! They’re packed with flavor. You can even prep ahead by making the meat the day before, and stuffing/baking them the night of!
Saturday: Stuffed Poblano Peppers – Stuffed poblanos are great! They have a little kick without being too spicy! Lots of flavor and super easy to make, these are a perfect addition to our Cinco de Mayo menu!
Sunday: Grilled Corn Salad with Grilled Lemon Chicken – Here’s a super light and fresh supper with a Tex-Mex flair! I love the contrast of buttery avocado with warm crunchy corn! YUM.

Hello my friends! I’ve created one grocery list for seven simple dinners! My focus this week is EASY meals! Strangely enough, our weeks have been so busy even though we haven’t left the house. Stew has been working long days finishing up a bathroom renovation, so I’ve been doing all the things on the home-front. By 5 o’clock, okay 4 o’clock, I’m ready to pour some wine and veg out. So dinners need to be simple.

Dinner Menu – Quick & Easy Suppers
Monday: Tortellini & Spinach is a 10 minute meal that is too easy for words. Here’s what you do… dice the onion & saute. Add minced garlic & saute. To that, add in about 2 cups spinach and cook until wilted. Then add canned diced tomatoes and saute together. Add salt & pepper to taste. Cook 2 packs tortellini. Add into sauce mixture. Add a few tbsp pasta water to loosen up the sauce if needed. Garnish with fresh basil and that’s IT!
Tuesday: Skillet Lasagna – Super easy and super tasty! My secret ingredient is burrata! Minor detail but makes this dish creamy and absolutely scrumptious!
Wednesday: Mongolian Beef Ramen by Delish is one of our favorites. We make it several times a month because it’s SO easy and packed with flavor. I actually use a filet instead of the sirloin. But whatever cut you choose, I promise, it will be a fan favorite in your house too.
Thursday: Sheet Pan Curried Chicken by The Pioneer Woman. The simplest meal, yet so delicious! I actually make it even easier and use a curry sauce rather than making my own. I always have a jar and it’s so flavorful! The kids are obsessed with this one. They call the chicken legs “dinosaur legs” which makes it even more exciting to them. Hey, whatever gets them to eat, I’m here for it!
Friday: Sheet Pan Fajitas by Food Network. I love fajitas! Especially when I don’t have to saute anything :o) I actually use fajita mix instead of the homemade seasoning that this recipe calls for. I’m all about shortcuts these days!
Saturday: Steak Kabobs by Joyful Healthy Eats. We’ve been grilling quite a bit these days. Once it hits 70 here, we’re outside more than in! So this was a perfect grilled supper. I served these up with a side salad, and they were delicious! I left out the mushrooms, because I’m not the biggest fan. They were just as flavorful and truly hit the spot!
Sunday: Cashew Chicken by The Pioneer Woman. I love cashew chicken. There’s something about the crunchy cashews and warm chicken that gets me every time! Serve this up over rice and you’ve got yourself a “better-than-take-out” meal!
