Weekly Meal Planner – Clean Eats

A compilation of 7 “Clean Eats” meals. Seven meals with all of the ingredients you’ll need in one downloadable grocery list.

I’m on a clean eats kick, and I’m loving it! Our week of Tex-Mex cooking has me wanting all the avocado and grilled things! So, this week’s menu is inspired by clean and fresh foods! Grab your grocery list HERE for this yummy menu. Hope you love it!

The Menu

Monday: Zucchini Chicken Enchilada – This dish is super packed with flavor. It satisfies that enchilada craving without the heavy tortillas and tons of cheese weighing you down.

Tuesday: Lemon Parmesan Flounder – I followed the recipe but pan seared, rather than baked, the flounder on both sides until cooked through. And, it was crispy and delicious! I served this up with roasted asparagus. But you could choose any veggie you like. It’s refreshing and perfect for a clean eating night!

Wednesday: Cilantro Lime Chicken with Brown Rice – I used chicken breasts for this instead of thighs (noted in grocery list). I marinated them and cooked them on the grill. They are so flavorful and fresh! I served these up over brown rice. YUM!

Thursday: Thai Curry Chicken Soup – Now, this is a fan favorite in our house. It’s super easy too! I make the shredded chicken in advance by putting 2 chicken breasts in the crock pot (recipe HERE). Then, I whip it up the night of. It literally comes together in 15 minutes, and it’s so bright and flavorful.

Friday: Buffalo Chicken Sweet Potatoes – We used to eat these quite often when we did Whole30. They’re super filling and actually quite delicious! I make the chicken the same way I mentioned in my previous post by cooking 2 chicken breasts in the crock pot and shredding (recipe HERE). What’s better, is you can cook and shred all FOUR chicken breasts on Sunday, and then divide them so they’re ready to pop into two separate recipes during the week!

Saturday: Grilled Vegetable Quesadilla – These are perfect for when you want a clean meal, but you don’t have a ton of time. Saturdays are our days to go out, do our grocery shopping, walk around downtown (now that things are open), or grab an early glass of wine at our favorite wine bar. So, these are perfect for a busy Saturday, or any, night!
**NOTE: I used crumbled goat cheese instead of mozzarella and also omitted the portobellos because I don’t love them! (noted in grocery list)

Sunday: Braised Beef Ragu with Papardelle – So, I know I’m going against everything I just wrote about, but Sundays are for family dinners! But, we usually do a big Italian meal. Braised Beef Ragu with thick noodles are the best comfort food on a Sunday! Serve up with some crusty bread, and we’ve got ourselves the perfect Sunday Dinner!
