A healthy and delicious one pot meal, ready in minutes!

Asparagus and Potato Frittata is one of those sneaky meals that doesn’t feel like you’re using kitchen scraps, because it’s so luxurious and tasty. I switch up the ingredients depending on what I have on hand. It’s perfect for using up veggies that are on their way out!

I had some old yellow potatoes and a handful of asparagus left from another meal, so I whipped up an asparagus & potato version of a basic frittata recipe, and it came out absolutely delicious! As a side note, it’s great as breakfast leftovers. OR you can pour the mixture into muffin tins and make mini frittatas. Bake them and freeze to have on hand for a quick breakfast. Such a versatile meal!

In a large bowl, I mix together 8 eggs, a cup of milk (use dairy free if you wish), salt & pepper, a pinch of cayenne, and 1/2 cup shredded cheese (I happened to have mozzarella on hand. Cheese is cheese when you’re quarantined, right?). Whisk that all together and set aside.

Next, I heat up my cast iron skillet to medium low, add a splash of oil and get to choppin’. I dice up and sauté 1/2 an onion for about 3 minutes, until just softened. Then I add in 3 to 4 (small) yellow potatoes that I diced up quite tiny (about 1/4 inch pieces). Now here’s the important part!!! Arrange the potatoes on the skillet in a flat layer and, for the love of GOD, don’t TOUCH them! Let them cook for 5 minutes. Using a spatula, I flip the mixture and cook another 5 minutes.

Then, it’s time to add in the asparagus and sauté for 5 more minutes, mixing occasionally, until softened. Season the veggies with a touch of salt and pepper.

Pour in the egg mixture and carefully transfer to the oven to bake at 325*F for 25 minutes, until puffed and golden!

Let the frittata rest for about 10 mintues when it comes out of the oven. Garnish with fresh parsley and shaved Parmesan. Try not to eat the entire pan, I dare you!

Asparagus and Potato Frittata

Delicious and versatile, this dish is perfect for using up those ingredients on their way out the door!
Course Breakfast, Main Course

Ingredients
  

  • 8 eggs
  • 1 cup milk (dairy free if you choose)
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp cayenne pepper
  • 1/2 cup shredded cheese (cheddar, mozzarella, jack, etc)
  • 1/2 onion diced
  • 3 to 4 small yellow potatoes small dice (1/4 inch pieces)
  • 1/2 bunch asparagus chopped
  • 1 Tbsp grapeseed oil (or vegetable)
  • parsley to garnish (optional)
  • shaved parmesan to garnish (optional)

Instructions
 

  • Preheat oven to 325*F
  • In a large bowl, whisk together eggs, milk, salt, pepper, cayenne, cheese.
  • Preheat cast iron skillet to medium low.
  • Dice onion and add to skillet. Sauté for 3 to 5 minutes until softened.
  • While the onion cooks, dice yellow potatoes into small 1/4 inch pieces.
  • Add potatoes into skillet in a single layer. DO NOT TOUCH. Cook for 5 minutes. Flip and sauté another 5 minutes until cooked through.
  • Meanwhile, chop asparagus into small pieces (about 1/2 inch pieces) and add to the skillet. Cook for 5 minutes, until softened.
  • Season veggies with a sprinkle of salt and pepper.
  • Pour the egg mixture evenly over the vegetables.
  • Transfer skillet to the oven and bake for 25 minutes until puffed, golden, and cooked through.
  • Let rest for 10 minutes and garnish with parsley and shaved Paremesan.

If you’ve never experimented with creating recipes out of pantry items, now is the time! I have been cooking like a fiend the past few days! With two kids, a hubby, and a love for experimenting in the kitchen, I’m in my glory! I feel like it’s my duty to bring you delicious, and kid-approved recipes that you can use with ingredients you most likely have on hand. So here goes! I’ve rounded up my 5 favorite pantry meals for you to try in your own kitchen this week! 

Top 5 Pantry Recipes

  1. Potato Gnocchi original recipe from Pasta Social Club and adapted by Courtney Made. Both equally potato-ey and delicious! Also super fun to try since we have nothin’ but time on our hands ;o)

2. Turkey & Black Bean Enchilada Skillet by Greens & Chocolate. I actually ended up using that leftover shredded chicken (recipe HERE) I had on hand. Super convenient AND delicious. **NOTE- throw the skillet under the broiler for 5 minutes to brown up the top. It was a game changer! Took only a few minutes to throw together!

3. Pasta Carbonara by The Pioneer Woman. Let’s face it… everything she makes is good! This recipe is decadent and comforting. Exactly what I want right now!

4. Chili Mac & Cheese by Gonna Want Seconds is actually a recipe that I make quite often, even when we’re not in the midst of a global pandemic. It’s great to make ahead, and also perfect for bringing to friends, new moms, or family members! Whip up a fresh batch of corn muffins, and you’re golden!

5. And last, but not least, is this Sweet Potato & Brussels Sprouts Hash Bowl by Real Food with Dana. This is ALSO a recipe I make all the time. Sweet potatoes and brussels last forever! Add crispy bacon and a soft boiled egg to the mix, and you’ve got the perfect dish!

My Top 5 Immune Boosting Tips to get you through cold and flu season.

I know I’m not the only one feeling overwhelmed, and a tad unnerved, by the constant updates flying around about the Coronavirus. Part of me just wants to go on, business as usual. BUT now that the kids are home from school for two weeks, it seems more real. Anyone feel that? My “protect-my-family-from-the-world-ending” gene has kicked in. The only thing we can do to feel somewhat in control, is boost our immune systems!

We went to the store this morning for another “load up” session so we’re stocked in case things shut down. I mean, that’s worse case scenario, BUT I’d rather have food should things go south. While out, I made sure to load up on ingredients for my immune boosting tips and tricks!

Now that we’ve stocked up on enough toilet paper to last a lifetime, let me share some helpful hacks to fight this nasty virus going around! I use these things during cold/flu season regardless of the type of virus. I see a major difference in our health AND longevity of the crud if we catch it. This goes for all of us, kids included! I’ll link to recipes and items so you can make your shopping list easily!

Top 5 Immune Boosting Tips

Vitamin D and a good Multi (one pictured above from Whole Foods) are a MUST! I always read the ingredients. So many of these are loaded with food coloring, sugar, and junk! These are my current favs for the kids.
This is the secret weapon! Mix equal parts turmeric and local honey (1 tsp of each) in a bowl and eat it straight! This is a game changer when it comes to preventing and fighting colds! Take it daily. When sick, take it a few times a day. I give the kids about half the amount.
**Get the ORGANIC turmeric since you’re eating it straight, and LOCAL honey. If you don’t know the benefits of local honey, give it a good ol’ google search. You’ll be amazed!
Elderberry Syrup is such a powerful cold/flu fighting remedy! I order THESE ELDERBERRIES online and make THIS recipe. It makes a ton. I keep it in the fridge and dose up the kids every morning.
Last, but not least, I’ll do a shot of Apple Cider Vinegar. It’s NASTY, but it works. I’m sure you’ve had worse drinks in your hay-day ;o)
**Make sure you get the RAW and UNFILTERED kind.
Green tea is GREAT for building your immune system! I love to put lemon and that good ol’ local honey you’re going to buy in it for added benefits!
