Hello, and happy weekend! On the regular, I plan a meal plan for you, along with a downloadable grocery list. I have several reasons for doing this but, mainly, it helps me stay within budget and spend less time in the kitchen on weeknights! By the time Stew gets home from work, it’s close to 6, so that leaves me and the kids to get dinner on the table!
In these posts, I share my meals for the week, along with a grocery list to go along with them! Download and print the list HERE! This week’s focus is pantry meals. Are you surprised?! So, being quarantined has caused me to get creative in the kitchen. I’ll admit, I don’t hate that part! Now, I’ve tested all of these, and they’re delicious. So let’s get started!
7 Pantry Meals To Die For
The Dinner Menu:
Monday: Potato Gnocchi I can’t even explain how delicious these are! They are the best gnocchi I’ve ever made. Original recipe from Pasta Social Club and adapted by Courtney Made. Both equally potato-ey and delicious! And, also, it’s super fun to try since we have nothin’ but time on our hands ;o)
Tuesday: Turkey & Black Bean Enchilada Skillet by Greens & Chocolate. I actually ended up using that leftover shredded chicken (recipe HERE) I had on hand. Super convenient AND delicious. **NOTE- throw the skillet under the broiler for 5 minutes to brown up the top. It was a game changer! And it took only a few minutes to throw together.
Wednesday: Pasta Carbonara by The Pioneer Woman. Let’s face it… everything she makes is good! This recipe is decadent and comforting. Exactly what I want in life right now!
Thursday: Chili Mac & Cheese by Gonna Want Seconds is actually a recipe that I make quite often, even when we’re not in the midst of a global pandemic. It’s great to make ahead, and also perfect for bringing to friends, new moms, or family members! I threw in a can of black beans which was delish! I also used ground turkey! Whip up a fresh batch of corn muffins, and you’re golden!
Friday: Sweet Potato & Brussels Sprouts Hash Bowl by Real Food with Dana is a staple here. This is ALSO a recipe I make all the time. Sweet potatoes and brussels last forever! Add crispy bacon and a soft boiled egg to the mix, and you’ve got the perfect dish! I keep seasonings simple here. We like just salt and pepper!
Saturday: Sloppy Joe Bowls. This is a Whole 30 friendly meal. However, you can definitely use your favorite sloppy joe recipe and load it onto a baked potato. the flavor combo is to die for!
Sunday: Asparagus & Potato Frittata. This is so tasty and super easy! It’s even great as leftovers for breakfast the next day!
