Cook rice according to package instructions. I used short grain brown rice.
Meanwhile, heat nonstick skillet over medium heat. Add sesame oil.
Dice shallot, ginger, and garlic and saute until softened. About 3 minutes.
Add in meat and cook completely.
Add in salt and onion powder. Stir to combine.
Add in soy sauce and juice of one lime.
Turn heat to medium-low and simmer & saute, stirring constantly, until sauce thickens and coats the meat. About 3-4 minutes.
To serve: layer rice in the bowl, top with meat, scallions, sesame seeds, and avocado. Drizzle sriracha and enjoy!
