Korean Bowl

Ingredients
  

  • 1 Tbsp sesame oil
  • 1 shallot diced
  • 2 inch ginger peeled and diced
  • 1 clove garlic diced
  • 1 lb 93% lean ground turkey *or ground beef
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 cup soy sauce
  • 1 lime juiced
  • Short Grain Brown Rice
  • avocados to garnish
  • scallions to garnish
  • Sriracha to garnish
  • sesame seeds to garnish

Method
 

  1. Cook rice according to package instructions. I used short grain brown rice.
  2. Meanwhile, heat nonstick skillet over medium heat. Add sesame oil.
  3. Dice shallot, ginger, and garlic and saute until softened. About 3 minutes.
  4. Add in meat and cook completely.
  5. Add in salt and onion powder. Stir to combine.
  6. Add in soy sauce and juice of one lime.
  7. Turn heat to medium-low and simmer & saute, stirring constantly, until sauce thickens and coats the meat. About 3-4 minutes.
  8. To serve: layer rice in the bowl, top with meat, scallions, sesame seeds, and avocado. Drizzle sriracha and enjoy!
